  • 2 3-ounce packs of chicken-flavored ramen noodle soup mix
  • 1 2-3-pound roasted whole chicken from grocer’s deli
  • 1 tsp sesame oil
  • 1 TBS soy sauce
  • cayenne pepper
  • 2 TBS butter, divided
  • ½ cup sliced almonds
  • ¼ cup sesame seeds
  • 1/3 cup vegetable oil
  • 2 TBS sesame oil
  • ½ cup red wine vinegar
  • ¼ cup sugar
  • ¼ cup soy sauce
  • ½ tsp black pepper
  • 1 head romaine lettuce, washed, dried, and torn
  • 5 green onions, sliced
  • 10-ounce can mandarin oranges, drained
  1. Remove flavor packets from soup mixes, reserve 1 packet
  2. Break noodles apart on baking sheet and broil 6” from heat for 4-5 minutes or until browned, stirring every minute
  3. Pull chicken from bones, coarsely chop, and mix with 1 tsp sesame oil, 1 TBS soy sauce, and dash of cayenne pepper; set aside
  4. Melt 1 TBS butter in large skillet over medium heat; add almonds and sesame seeds; cook, stirring constantly, 3 minutes or until lightly browned; remove and set aside
  5. To the skillet add remaining butter and chicken and cook 4-5 minutes until thoroughly heated
  6. Whisk together seasoning packet, oils, vinegar, and next 3 ingredients into large salad bowl
  7. Add lettuce, green onions, mandarin slices, sesame seed mixture, chicken, and noodles, tossing to coat; serve immediately

Serves 4-6
