Papa gets a chance to show off on the grill!

Ingredients:John K

  • 3-5 lb pork tenderloin cut into 1” x 1” cubes for skewering
  • 2 large bell peppers, cut into bite-sized pieces
  • 1 Vidalia onion, cut and broken into bite-sized pieces
  • 1 large can pineapple chunks

Marinade:

  • ½ bottle raspberry vinaigrette dressing
  • ¼ cup soy sauce
  • 1 tsp garlic salt
  • 1 tsp lemon-pepper seasoning salt
  • 1 TBS Worcestershire sauce

Mustard Sauce:

  • 1 cup sour cream
  • 1 cup mayonnaise
  • ½ tsp dry mustard
  • 2 TBS Creole (spicy brown) mustard
  • 2 tsp apple cider vinegar

Instructions:

  1. Mix ingredients for marinade; pour over pork pieces and marinate 2-3 hours
  2. Skewer pork, bell pepper, onion, and pineapple pieces alternating on skewers
  3. Place on grill and cook for about 12 minutes turning frequently (pork will cook quickly in small pieces)
  4. Mix ingredients for mustard sauce and have available at table

Serves 6

NOTE:  Serve kabobs with broccoli-almond rice (see vegetables)
