Mouth-watering potato dish that substitutes well for plain or mashed potatoes.

Ingredients:

  • 1 28-ounce bag of baby potatoes
  • 2 TBS canola oil
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 TBS chopped chives
  • 2/3 cup ranch-style sour cream dip
  • 1 cup Sargento Chef Blends shredded cheddar cheese
  • 1/2 cup French fried onions

Instructions:

  1. Preheat oven to 325°
  2. Toss potatoes with oil, salt, and pepper; place in 2-qt baking dish
  3. Bake for 35-40 minutes until tender
  4. Remove from oven and mash coarsely with potato masher
  5. Spread dip over potatoes
  6. Top potatoes with cheese, onions, and chives
  7. Bake another 8-10 minutes until cheese is melted

Cauliflower is a wonderful vegetable that has great versatility.  This example is a delicious, healthy alternative to mashed potatoes.

Ingredients:

  • 1 head of cauliflower, separated into individual flowerettes
  • 1/2 stick butter
  • 1/4 cup heavy cream or Half 'n Half
  • 1 1/2 cups of white cheddar cheese; or substitute you own favorite
  • 1 TBS chopped chives
  • 1/4 cup cream cheese
  • Parmesan cheese

Instructions:

  1. Place cauliflower into a steamer basket and cook until softened; approximately 12-15 minutes
  2. Add next 5 ingredients while beating with immersion blender or conventional mixer
  3. Pour mashed cauliflower mixture into casserole dish and sprinkle liberally with Parmesan cheese
  4. Bake in oven at 350° for approximately 8-10 minutes
  5. Serve hot

This delicious recipe could be classified a dessert!  Popular not only during the holidays, but anytime of year especially when paired with pork, turkey, wild game or chicken.

Casserole Ingredients:

  • 3 cups boiled, mashed sweet potatoes
  • 1/2 tsp vanilla extract
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 eggs, beaten
  • 1/2 cup milk or Half 'n Half
  • 1 can crushed pineapple

Topping Ingredients:

  • 1 cup brown sugar
  • 1/2 cup flour
  • 1/2 cup softened butter
  • 1 cup chopped pecans
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon

Casserole Instructions:

  1. Into a large mixing bowl, beat together potatoes, extract, butter, sugar, eggs, Half 'n Half
  2. Fold in the crushed pineapple without beating
  3. Place into lightly greased 9 x 13" or two 9 x 9" baking pans
  4. Sprinkle topping mixture (see instructions) over sweet potatoes and sprinkle nutmeg and cinnamon over top
  5. Bake uncovered in a preheated 350° oven for 45 to 50 minutes until browned and bubbly

Topping Instructions:

  1. In a food processor fitted with a steel blade, combine sugar, flour, and butter until crumbly
  2. After processing, fold in pecans thoroughly
  3. Nutmeg and cinnamon are sprinkled on top of mixture

NOTE:  The casserole may be refrigerated covered from up to two days or covered and frozen for up to 2 weeks then defrosted for 1 day in the refrigerator
