This simple recipe combines just a few ingredients to create one of the South's most popular candies!
Courtesy of Marcelle Bienvenue
Ingredients:
- 2 1/4 cups firmly packed light brown sugar
- 1/8 tsp salt
- 3/4 cup evaporated milk
- 1 TBS butter
- 2 cups pecan halves
Instructions:
- Into a heavy, medium saucepan, combine sugar, salt, milk, and butter
- Cook over low heat, stirring constantly, until sugar dissolves
- Stir in pecans, and cook over medium-low heat, until mixture reaches soft ball stage (234°-240° on a candy thermometer)
- Remove from heat, and let cool for 2 minutes
- Stir mixture rapidly until it begins to thicken and lightly coats the pecans
- Drop by heaping tablespoonfuls onto parchment paper
- When full cooled, store in an airtight container for up to 1 week
NOTE: For a really deep-south taste try adding 1/4 cup of fresh, crispy bacon pieces at the same time you stir in the pecans! Yes BACON!
