Ingredients:John K

  • 1 cup seasoned breadcrumbs or garlic-flavored croutons
  • 1/2 tsp black pepper
  • 1/4 tsp Cayenne pepper
  • 1 tsp chili powder
  • 1 tsp dried thyme
  • 1/4 large white onion, very finely chopped
  • 1/2 medium carrot medium grated
  • 3 cloves garlic minced or grated
  • 1/2 red bell pepper-finely chopped
  • 1 lightly beaten egg
  • 1 tsp salt
  • 1 pound ground chuck or sirloin
  • 1 pound ground pork

Glaze:

  • 1/2 cup ketchup
  • 1 tsp ground cumin
  • 2 dashes of Worcester Sauce
  • 2-3 dashes of your favorites hot pepper sauce
  • 1 TBS honey

Instructions:

  1. Preheat oven to 325°
  2. Into a large mixing bowl combine the breadcrumbs and next 10 ingredients thoroughly
  3. Add beef and pork to mixture and mix gently incorporating meats with mixture
  4. Place meat mixture into a metal meatloaf pan lined with wax or parchment paper
  5. Allow to set approximately 10 minutes before turning over onto a large, greased baking sheet
  6. Place into the preheated oven for approximately 35 minutes or until the internal temperature of the meat is 155°
  7. Combine glaze ingredients into a bowl and coat on to the outside surfaces of the meatloaf for the last 15 minutes
  8. Remove finished meatloaf and allow to stand for 10-15 minutes before serving

Serves 4-6
