This recipe is both simple and delicious. Combines easily found ingredients and simple instructions to provide an authentic Asian flavor to this popular chicken dish

Ingredients:
- 4 medium skinless-boneless chicken breasts
- 1/2 cup flour
- 1/4 cup canola oil
- minced or grated garlic clove
- 4 TBS of rice wine vinegar
- 2 TBS brown sugar
- 1 tsp grated fresh ginger
- 1/2 cup soy sauce
- 1 tsp black pepper
- 1/4 tsp red pepper flakes
- 4 TBS ketchup
- 1/c chopped cashew nuts
Instructions:
- Cut chicken into bite-sized pieces and shake in plastic bag with flour to coat thoroughly
- Heat oil in a large frying pan over medium high heat
- When oil reaches a temperature of approximately 360°-370° add some of the coated chicken pieces (do not overcrowd)
- Continue to fry chicken pieces for about 4 minutes turning often
- When all of the chicken is finished frying, drain skillet and return to medium heat
- In a separate bowl combine garlic and next 7 ingredients then add to the skillet
- Return chicken pieces to pan when sauce is thoroughly heated
- Add cashews and heat slowly for 15 minutes
- Serve with Basmati or white rice
