Mashed Cauliflower

Cauliflower is a wonderful vegetable that has great versatility.  This example is a delicious, healthy alternative to mashed potatoes.

  • 1 head of cauliflower, separated into individual flowerettes
  • 1/2 stick butter
  • 1/4 cup heavy cream or Half 'n Half
  • 1 1/2 cups of white cheddar cheese; or substitute you own favorite
  • 1 TBS chopped chives
  • 1/4 cup cream cheese
  • Parmesan cheese


  1. Place cauliflower into a steamer basket and cook until softened; approximately 12-15 minutes
  2. Add next 5 ingredients while beating with immersion blender or conventional mixer
  3. Pour mashed cauliflower mixture into casserole dish and sprinkle liberally with Parmesan cheese
  4. Bake in oven at 350° for approximately 8-10 minutes
  5. Serve hot
