Cauliflower is a wonderful vegetable that has great versatility. This example is a delicious, healthy alternative to mashed potatoes.

Ingredients:
- 1 head of cauliflower, separated into individual flowerettes
- 1/2 stick butter
- 1/4 cup heavy cream or Half 'n Half
- 1 1/2 cups of white cheddar cheese; or substitute you own favorite
- 1 TBS chopped chives
- 1/4 cup cream cheese
- Parmesan cheese
Instructions:
- Place cauliflower into a steamer basket and cook until softened; approximately 12-15 minutes
- Add next 5 ingredients while beating with immersion blender or conventional mixer
- Pour mashed cauliflower mixture into casserole dish and sprinkle liberally with Parmesan cheese
- Bake in oven at 350° for approximately 8-10 minutes
- Serve hot
