This tasty recipe may be prepared in a slow cooker at medium temperature for 3 hours!

Ingredients:

  • 2# boneless-skinless chicken breast tenders
  • 1/2 cup cashews-coarsley chopped
  • 1 garlic clove, minced
  • 4 TBS rice wine vinegar
  • 2 TBS brown sugar
  • 1 TBS canola oil
  • 1 tsp grated fresh ginger
  • 1/4 c all-purpose flour
  • 1/2 c soy sauce
  • 1 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 4 TBS ketchup


Instructions:

  1. Mix flour & pepper in plastic storage bag
  2. Add chicken pieces to bag and shake
  3. Heat oil in pan over medium high heat
  4. Add chicken, cook 4 minutes continuously flipping
  5. Prepare sauce in bowl by combining soy sauce, vinegar, ketchup, sugar, garlic, ginger, & pepper flakes
  6. Remove chicken from pan and drain excess oil
  7. Return chicken to pan and add sauce and cashews while heating slowly for 15 minutes
  8. Serve with steamed rice, ladling sauce over rice
