Put that left-over turkey to work with this delicious gumbo

  • 3/4 cup vegetable oil
  • 3/4 cup flour
  • 1 medium onion, finely chopped
  • 1 small bell pepper, finely chopped
  • 2 ribs celery, finely chopped
  • 1 pound pork sausage; cut into half circles
  • 1 can Cajun-style stewed tomatoes, coarsley chopped
  • 1 quart chicken stock
  • left over turkey carcass with meat and bones
  • water to cover
  • 1 tsp Tabasco sauce
  • 1/2 tsp basil
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp thyme
  • 1/8 cup chopped green onions
  1. Into a large Dutch oven heat oil and flour over medium high heat, stirring constantly
  2. When medium-dark roux is achieved, add onion, bell pepper, celery and sausage; cook until vegetables are wilted, stirring constantly
  3. Add tomatoes and mix in well, cook additional 5 minutes
  4. Add turkey
  5. slowly add chicken stock, stirring constantly
  6. Add Tabasco and next 3 ingredients
  7. Add water to barely cover turkey
  8. Bring to a boil then reduce to a simmer
  9. Partly cover pot cooking 1-3 hours, stirring occasionally
  10. Add green onions during last 20 minutes
  11. Serve over steamed rice

Serve with your favorite potato salad recipe
