White Chicken Chili

Delicious on a cool fall or winter evening.  Nice alternative to the tomato-based chili recipes

 

Ingredients:

  • 3 TBS olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 6 TBS flour
  • 1 small can diced green chilies
  • 2 TBS minced jalapeno from jar
  • 2 tsp cumin
  • 2 cans Great Northern white beans
  • 2 14-oz. cans chicken broth
  • 2 cooked chicken breasts, cubed or shredded

Directions:

  1. In large saucepan, saute onions & garlic in oil until onions are transparent
  2. Add green chilies, jalapenos, cumin and stir thoroughly
  3. Add flour and cook for 2 minutes, stirring constantly
  4. Add beans with liquid and chicken broth; bring to boil, reduce heat and simmer until thickened
  5. Add chicken and continue cooking until chicken is hot
  6. Ladle into individual bowls, topping with your favorite cheese, sour cream, and salsa if you like
