Great appetizer!
- 1 stick butter
- 1 cup finely chopped celery
- 1/2 cup finely chopped green onions
- 2/3 cup flour
- 1 TBS minced garlic
- 2 doz. large, freshly shucked oysters and liquid
- 6 cups of oyster liquor plus water
- 2 bay leaves
- 1 tsp salt (depends upon saltiness of oysters)
- 1/2 tsp white pepper
- Melt butter over medium heat in heavy saucepan
- Saute\’ celery and green onions until tender; about 2-3 minutes, stirring frequently
- Gradually stir in flour and cook another 5 minutes, stirring constantly over low heat
- Add remaining ingredients, and simmer for 20 minutes
- Remove from heat and discard bay leaves
- Serve immediately
