Great appetizer!

  • 1 stick butter
  • 1 cup finely chopped celery
  • 1/2 cup finely chopped green onions
  • 2/3 cup flour
  • 1 TBS minced garlic
  • 2 doz. large, freshly shucked oysters and liquid
  • 6 cups of oyster liquor plus water
  • 2 bay leaves
  • 1 tsp salt (depends upon saltiness of oysters)
  • 1/2 tsp white pepper
  1. Melt butter over medium heat in heavy saucepan
  2. Saute\’ celery and green onions until tender; about 2-3 minutes, stirring frequently
  3. Gradually stir in flour and cook another 5 minutes, stirring constantly over low heat
  4. Add remaining ingredients, and simmer for 20 minutes
  5. Remove from heat and discard bay leaves
  6. Serve immediately

Serves 6
