White Bean Soup

Delicious as hearty appetizer or dinner

Ingredients:

  • Hambone or 1 cup diced pickled pork seasoning
  • 2 medium onions, finely chopped
  • 3 ribs celery, finely chopped
  • 1 bell pepper, finely chopped
  • 1 link smoked pork sausage, cut into half rounds
  • 1 can stewed tomatoes, Cajun style if available, otherwise Italian style
  • 3 cans chicken stock
  • 1 TBS minced garlic
  • ½ cup chopped green onions
  • ¼ cup chopped fresh parsley
  • 3 cans Blue Runner White Beans
  • 1 TBS Worcestershire sauce
  • 1 TBS Louisiana hot sauce
  • No salt

Instructions:

  1. Into a large Dutch oven, combine all ingredients and bring to a boil
  2. Once boil is achieved, lower temperature to low simmer, cover and cook for at least 2 hours, stirring occasionally careful to scrape sides and bottom to keep beans from burning

Serves 6
