Shrimp Bisque

 Delicious as an appetizer (without rice) or winter entree'.

Ingredients:

 

  • 2 TBS olive oil
  • 2 TBS chopped green onion
  • 2 pods garlic, chopped
  • ¬Ĺ pounds medium shrimp, peeled and deveined
  • 1 can tomato soup
  • 1 can potato soup
  • 1 can cream of shrimp soup
  • 1 can chicken stock
  • 16 ounces Half & Half
  • ¬ľ tsp black pepper
  • ¬Ĺ tsp salt
  • 1 cup lump crabmeat, picked for shells
  • ¬ľ cup sherry
  • ¬Ĺ tsp thyme
  • ¬Ĺ tsp basil
  • ¬Ĺ tsp Tabasco sauce
    Directions:
  1. Sauté green onions and garlic briefly in olive oil
  2. Add shrimp and continue cooking until shrimp turn pink
  3. Add above to blender and puree until smooth
  4. Into a large sauce pan, add pureed ingredients and remainder of recipe; continue cooking on medium heat for about 1 hour, stirring occasionally, careful not to allow sticking on bottom
  5. Serve over steamed rice

Serves 8-10
