Potato, Green Onion & Sausage Soup

  • 6 cups peeled and diced potatoes
  • 4 cups each of white and green scallion sections
  • 1 pound smoked sausage, sliced
  • 3 quarts chicken stock
  • ¼ cup melted butter
  • 1 cup finely chopped celery
  • 1 cup finely chopped red bell pepper
  • ¼ cup minced garlic
  • 2 cups whipping cream
  • ½ cup chopped parsley
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tsp Louisiana Hot Sauce
  1. Into a stock pot place 4 cups potatoes and 3 quarts chicken stock; bring to a rolling boil and cook until potatoes are tender for mashing
  2. Strain stock from potatoes and set aside
  3. Mash potatoes and set aside
  4. Into same pot, melt butter over medium high heat, add sausage and sauté until oil is rendered; remove sausage and set aside
  5. Add white portion of scallions, celery, bell pepper, and garlic; sauté 3-5 minutes until vegetables are wilted
  6. Add half of the mashed potatoes and stir well into vegetables
  7. Pour in stock and whipping cream, bring to a boil and reduce heat to simmer; cook for 30 minutes
  8. Add remaining potatoes, sausage and scallion greens; continue to simmer until potatoes are tender
  9. Add parsley and season with salt, pepper, and hot sauce
