Wow! Serve this and you may never eat your regular red beans and rice!
- ½ cup vegetable oil
- ¼ cup flour
- 1 stalk celery, chopped
- 1 large onion, chopped
- 1 bell pepper, chopped
- ¾ pound smoked sausage, cut into half rounds
- 1/3 pound smoked andouille sausage, diced
- ½ pound ham or pork seasoning meat, diced
- 2 pods garlic, minced
- 6 green onions, chopped
- 3 cans Blue Runner Cream Style red beans
- 3 cans chicken stock
- ½ tsp salt
- ½ tsp black pepper
- In the bottom of a large heavy soup pot, heat oil over medium high heat and whisk in the flour; continue stirring until a medium brown color is reached; about 30 minutes
- Add onion, celery, and bell pepper, continue stirring until vegetables cook down, about 20 minutes
- Add sausage, andouille, and ham seasoning; continue cooking for 10 minutes rendering the oils from the meats
- Add remaining ingredients, incorporating well; bring to a boil, then reduce heat to low temperature, continue cooking for at least 1 ½ hours.
- Serve over steamed rice in gumbo bowls
