Stuffed Bell Pepper III

Simple and delicious.  Great one-dish meal!

Ingredients:

  • 3 large green peppers
  • 2 sticks butter
  • 1 cup finely chopped onions
  • 3/4 cup finely chopped celery
  • 3 1/2 TBS finely chopped parsley
  • 1/2 pound ground beef
  • 1 pound fresh shrimp, peeled and deveined
  • 6 ounces stale French bread, crumbled
  • 3 eggs, lightly beaten
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 cup bread crumbs

Instructions:

  1. Preheat oven to 350°
  2. Split peppers in half horizontally; remove seeds and membranes; wash and set aside
  3. Melt butter in large skillet
  4. Add onion, celery, and parsley; sauteing for 10 minutes
  5. Add ground beef and raw shrimp; saute until meat is lightly browned, about 5 minutes
  6. In large bowl, dampen bread until moist; squeeze out excess water, then add eggs, mixing well
  7. Stir into the bowl, the sauteed ingredients
  8. Blend in salt, pepper and garlic powder
  9. Place stuffing into an 8”x8” baking pan and bake for 40 minutes, stirring occasionally to prevent crust from forming
  10. Remove from oven and place into refrigerator until chilled; skim off any fat that appears after chilling
  11. Fill peppers with chilled mixture and top with bread crumbs
  12. Place peppers into shallow baking pan fill with enough water to cover bottom of pan
  13. Bake 20-25 minutes at 350º for 20-25 minutes or until peppers are tender and stuffing is browned
