Squash Casserole

Delicious as a vegan one-dish meal or as a side dish with chicken or turkey

Ingredients:

  • 2 cups diced, par-boiled yellow squash
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/2 cup mild cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 1 egg, lightly beaten
  • 1 small can water chestnuts, drained
  • 1 cup Ritz crackers, crumbled
  • 1/2 cup melted butter

Directions:

  1. Into a large bowl, combine squash and next 6 ingredients
  2. In a separate bowl, mix cracker crumbs with melted butter
  3. Place vegetable mixture into a large, lightly greased casserole
  4. Top with cracker mixture
  5. Bake at 400° until top has lightly browned, about 25 minutes

Serves 6-8
