Stuffed Bell Peppers II

Ingredients:

  • 3 TBS olive oil
  • 3 medium onions, finely chopped
  • 2 green bell peppers, chopped
  • 1 red bell pepper, chopped
  • 3 pods garlic, finely minced
  • 1 lb ground pork
  • 1 lb ground veal
  • 1 lb ground beef
  • 3 green onions, chopped
  • 1/4 cup parsley, finely chopped
  • 6 stale hamburger buns
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper
  • 12 green bell peppers, cut in half lengthwise, washed and seeded
  • bread crumbs

Directions:

  1. Saute\’ onions and chopped bell peppers in olive oil over medium heat until wilted
  2. Add garlic and cook additional 4 minutes
  3. Add ground meats and cook until pink color has disappeared, about 10 minutes
  4. Add parsley and green onions
  5. Into a separate bowl, soak buns briefly in milk and break into small pieces, place into vegetable-ground meat mixture; combine thoroughly
  6. Season with salt and pepper
  7. Into a pot of boiling water, place halved peppers (a few at a time) briefly to soften; remove and drain
  8. Stuff peppers with mix and top with bread crumbs
  9. Set stuffed peppers into a large pan in small amount of water and bake at 350° for 35 minutes

Serves 10-12
