This works very nicely with fowl, beef, or pork dishes

  • 2 10-oz boxes of chopped spinach
  • 14.5-oz can beef broth
  • pkgs long-grain and wild rice dinner
  • TBS butter
  • 1 medium onion chopped fine
  • 2 ribs celery chopped fine
  • 2 cups grated Mozzarella cheese
  • ½ cup of plain bread crumbs
  1. Cook spinach according to package directions
  2. Cook rice in beef broth rather than water as per box directions
  3. Saute’ onion and celery in butter until onion is clear and limp
  4. Combine spinach, rice, and onion mixture, and cheese into large bowl & mix well
  5. Place into greased (or sprayed) glass casserole dish at 325° uncovered for 20 minutes

Serves 6-8
