White Beans with Ham & Pickled Pork

Comfort food at its best!!

 

  • 1 pound Great Northern navy beans
  • ½ cup Crisco or bacon drippings
  • 1 cup chopped onion
  • 1 cup chopped celery
  • ½ cup chopped bell pepper
  • ¼ cup minced garlic
  • 1 cup sliced green onions
  • 2 cups diced smoked ham
  • 1 pound pickled pork
  • ½ cup chopped parsley
  • 1 cup sliced green onions
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tsp Louisiana Hot Sauce
  1. Place rinsed beans into 1 ½ quarts water, covered overnight in refrigerator
  2. Into a 4-quart sauce pot, melt Crisco or bacon drippings over medium high heat; add onions and next 5 ingredients; sauté for 8 minutes until wilted
  3. Add salt mean or pork and beans, blend well and cook 2-3 minutes
  4. Add enough cold water to cover beans by 1-2”; bring to rolling boil and allow to cook 20 minutes, stirring occasionally; reduce heat to simmer and ccok about 1 hour until beans are tender
  5. Add chopped parsley and additional green onions, salt, pepper, and hot sauce
  6. Using a metal spoon, mash 1/3 of beans against side of pot to create creaming effect
  7. Serve over steamed white rice

Best cooked 1 day before it is to be served
