Great substitute for traditional baked potatoes

  • 8 medium Yukon Gold potatoes
  • 8 oz. cream cheese, softened
  • ½ cup sour cream
  • ¼ cup butter softened
  • ¼ cup chopped fresh chives
  • 4 slices bacon, cooked and crumbled
  • ½ tsp black pepper
  • ¼ tsp salt
  • ½ cup shredded cheddar cheese
  1. Wash potatoes, prick several times with fork, place in covered microwavable dish with small amount of water; cook on high for 10-11 minutes (thin knife should easily penetrate fully cooked potato) then peel potatoes
  2. Mash or whip potatoes, add cream cheese and next 6 ingredients; mix well
  3. Place potatoes in individually lightly greased ramekins
  4. Sprinkle with cheddar cheese
  5. Bake at 350° for 20 minutes

Serves 6
