Lots of color for a Holiday dish

  • 1/4 cup pine nuts (walnuts may be substituted)
  • 2 16-oz pkgs frozen French-style green beans
  • ½ medium-sized onion sliced in thin strips
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning (dried)
  • 1 TBS olive oil
  • 4 plum tomatoes, chopped
  • 2 TBS lemon juice
  • 1 tsp salt
  • ½ tsp fresh ground black pepper
  • 1 small jar of pimentos
  • 1 4-ounce package crumbled feta cheese
  1. Bake pine nuts in shallow pan at 350? for 6-10 minutes. Set aside
  2. Defrost & drain green beans well. Dry with paper towels
  3. Sauté’ onion, garlic & Italian seasonings in olive oil for 1 minute;
  4. Add green beans & sauté’ additional 5 to 7 minutes
  5. Stir in lemon juice, salt, pepper and pimentos
  6. Sprinkle with cheese and pine nuts

Serves 6
