Sweet & Sour Green Beans

Colorful and delicious for a brunch or luncheon.

Ingredients:

  • 1 ½ cups sugar
  • ½ cup olive oil
  • 1 cup wine vinegar
  • 1 tsp salt
  • ¼ tsp cayenne pepper
  • 4 cans whole green beans, drained and rinsed
  • 2 medium white or purple onions, sliced into thin half rounds
  • 2 small jars of pimento’s drained

Directions:

  1. Into a skillet heat and thoroughly combine first 5 ingredients; bring to a boil very slowly being sure sugar is completely dissolved
  2. Into a serving bowl very gently mix green beans, onions, and pimentos
  3. Pour dressing ingredients over beans and refrigerate for at least 1 hour

Serves 10-12
