Always a hit with a company dinner!

Ingredients:

  • 2 zucchini, washed and cubed
  • 2 yellow squash, washed and cubed
  • 2 fresh tomatoes, washed and cubed
  • 1 onion, finely chopped
  • ½ tsp Tony Chachere’s seasoning mix
  • ¼ tsp Italian seasoning
  • 1/3 cup olive oil
  • 1 cup shredded mozzarella cheese
  • ½ cup seasoned bread crumbs
  • ¾ cup seasoned bread crumbs for topping

Directions:

  1. Season all vegetables with Tony’s and Italian seasonings
  2. Into a large skillet, add vegetables and olive oil, cover and cook at simmer for 10 minutes
  3. Add ½ cup bread crumbs and cheese, thoroughly combine and place in greased casserole; top with ¾ cup of bread crumbs
  4. Bake at 350° for 15 minutes

Serves 4
