Squash & Ground Meat Casserole |

Great Casserole!

Ingredients:
- 3 TBS vegetable oil (in all)
- 5 medium size yellow squash, washed and diced
- 1 cup finely chopped onion
- ½ cup finely chopped celery
- 2 pods garlic minced
- ½ tsp Tony Chachere’s seasoning mix
- ½ tsp green pepper sauce
- 1 tsp Worcestershire sauce
- ½ tsp black pepper
- ½ tsp salt
- 1 cup Parmesan cheese
- 1 cup seasoned bread crumbs
- 2 TBS mayonnaise
- 2 TBS ketchup
- 1 TBS fresh parsley, chopped
- Parmesan cheese for topping
- Bread crumbs for topping
Directions:
- In a large Dutch oven, heat 2 TBS oil and add squash, cook for 5 minutes stirring occasionally; remove from pot and set aside
- Add onion and celery plus 1 TBS oil and sauté until onion wilts, about 5 minutes
- Add ground meat and cook until all pink color has disappeared
- Add remaining ingredients and stir until entire mixture is combined
- Return squash to pot and gently incorporate
- Place entire contents of pot into greased casserole dish, sprinkle bread crumbs and parmesan cheese over top
- Bake at 350° for 35 minutes and serve hot
Serves 4
You may use cracker crumbs on top in lieu of bread crumbs
