Recipe created by a popular B & B owner in St. Francisville, LA many years ago! Popular when served with steak.
Ingredients:
- 3 packages of frozen chopped spinach
- 2 TBS butter
- 1 TBS flour
- 2 TBS choppen green onion
- ½ of 6-ounce roll of Jalapeño or Mexican cheese
- ½ of 6-ounce roll of garlic cheese
- ¼ cup spinach liquor from above
- 1/2 cup sliced canned mushrooms
- ¼ tsp black pepper
- 1/3 tsp celery salt
- ¼ tsp salt
- ½ tsp Worcestershire sauce
- 1/8 tsp cayenne pepper
- 1 tsp paprika
- ½ cup sliced almonds, toasted
- ½ cup seasoned bread crumbs
- 8 half inch butter pats
Directions:
- Cook spinach according to directions, drain, reserving liquid
- In large sauce melt butter and whisk in flour, continuously whisking until smooth
- Add onion and cook for additional 3 minutes
- Add Jalapeño and garlic cheeses, stirring to prevent sticking
- Add mushrooms and ¼ cup of spinach liquor
- Add all seasonings and spinach and thoroughly combine over medium heat for 5 minutes
- Pour entire mixture into a greased casserole and sprinkle with bread crumbs, almonds, and butter pats
- Bake at 350° for 15 minutes, until hot and bubbly
Serves 6-8
