Great dish to accompany a broiled or grilled fish.

Ingredients:

  • 1 box artichoke rice, cooked per package instructions
  • ½ stick butter
  • ½ large onion, finely chopped
  • 1 large can artichoke hearts, washed, drained, tough outer leaves removed, chopped
  • 1 box spinach, cooked according to package instructions
  • ¼ tsp lemon-pepper seasoning
  • ¼ tsp garlic salt
  • 1 tsp Worcestershire sauce
  • ½ tsp White Worcestershire sauce
  • ½ cup sour cream
  • ½ cup Parmesan cheese, grated

Directions:

  1. Into a large skillet, sauté onion in butter until wilted
  2. Add artichokes and spinach, continue cooking for 8 minutes on simmer
  3. Add seasonings and fold in rice
  4. Add sour cream and Parmesan cheese, keep warm
  5. Serve hot
