Artichokes and spinach combined with Parmesan cheese and sour cream is a 'can't miss'!!

Ingredients:

  • 2 boxes frozen chopped spinach
  • 1 TBS vegetable oil
  • ½ stick butter
  • 1 onion, finely chopped
  • 2 stalks celery, finely chopped
  • 1 large can artichokes, tough outer leaves removed, chopped
  • 1 large bottle sliced mushrooms, drained
  • 4 ounces cream cheese
  • ½ roll garlic cheese
  • 1/8 tsp nutmeg
  • ¼ cup Italian bread crumbs

Directions:

  1. Cook spinach according to package instructions, drain, and set aside
  2. In large skillet, melt butter, add oil, onion, and celery; sauté until onion is wilted
  3. Add artichokes and sliced mushrooms, combining well cook about 3 minutes
  4. Add spinach, cream cheese, nutmeg, and garlic cheese, cook another 2 minutes combining well
  5. Place in greased casserole and sprinkle with bread crumbs
  6. Bake at 350° for 12 minutes until bubbly

Serves 6-8
