Tasty 'South of the Border' twist to the standard mac and cheese!

Ingredients:

  • 8 ounces uncooked penne' pasta
  • ¼ cup butter
  • ½ medium sweet onion, finely chopped
  • 1 8-ounce loaf Mexican-style cheese, cubed
  • 1 8-ounce container sour cream
  • 1 10-ounce can diced tomatoes and green chilies, drained

Directions:

  1. Cook pasta according to package directions, drain well
  2. Melt butter in large skillet over medium heat; add onion and sauté 5 minutes until tender
  3. Add cheese, and cook, stirring constantly, 5 minutes or until cheese melts
  4. Stir in sour cream, blending well
  5. Stir in tomatoes and green chilies and pasta; cook stirring constantly, 5 minutes until thoroughly heated
  6. Serve hot

Serves 6
