Delicious, even better if you can find fresh corn in your grocer's produce department!

  • 2-3 slices bacon
  • 1 TBS olive oil
  • 1 small onion, finely chopped
  • ½ can stewed tomatoes; cut into smaller pieces
  • 1 can cream style yellow corn
  • 1 can whole kernel yellow corn, drained
  • ½ tsp Tony Chachere’s seasoning mix
  • ¼ cup mild cheddar cheese
  • ½ tsp paprika


  1. In a large skillet, fry bacon until crisp, remove and crumble
  2. Add olive oil and onion and cook until onion begins to wilt
  3. Add stewed tomatoes and continue cooking until much of the liquid has disappeared, about 7 minutes
  4. Add corn, bacon pieces, and Tony’s; thoroughly combine
  5. Place corn mixture into a greased casserole and top with light sprinkling of cheddar cheese and paprika
  6. Bake at 350º for 30 minutes

Serves 4
