Delicious, even better if you can find fresh corn in your grocer's produce department!

Ingredients:
- 2-3 slices bacon
- 1 TBS olive oil
- 1 small onion, finely chopped
- ½ can stewed tomatoes; cut into smaller pieces
- 1 can cream style yellow corn
- 1 can whole kernel yellow corn, drained
- ½ tsp Tony Chachere’s seasoning mix
- ¼ cup mild cheddar cheese
- ½ tsp paprika
Directions:
- In a large skillet, fry bacon until crisp, remove and crumble
- Add olive oil and onion and cook until onion begins to wilt
- Add stewed tomatoes and continue cooking until much of the liquid has disappeared, about 7 minutes
- Add corn, bacon pieces, and Tony’s; thoroughly combine
- Place corn mixture into a greased casserole and top with light sprinkling of cheddar cheese and paprika
- Bake at 350º for 30 minutes
