Great Monday (wash day) tradition in New Orleans

 

Ingredients:

  • 1 pound red beans
  • 2 quarts water
  • 1 meaty ham bone or ½# pork seasoning meat
  • 1 pound smoked pork sausage
  • 2 cups chopped onion
  • 2 celery stalks, chopped
  • 1 bunch green onions, chopped
  • 1 green pepper, chopped
  • 4 bay leaves
  • ¼ tsp thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp Tabasco sauce

Directions:

  1. Rinse beans thoroughly, discard any bad ones; place in Dutch oven and add water; set over medium heat
  2. Add next 8 ingredients; bring to boil, then reduce and simmer 3 hours
  3. Using wood spoon or electric emulsifier, smash 1/3 to ½ of beans
  4. Serve over steamed rice

Serves 8-10
