Great relish that can be snacked on or spinkled over your favorite beef, pork, or chicken.

 Ingredients:

 

  • 5 15-ounce cans black-eyed peas, drained
  • 3 2 ¼-ounce cans sliced black olives, drained
  • 2 cloves garlic, pressed
  • ¼ cup sliced green onion tops
  • ½ cup olive oil
  • ¾ cup red wine vinegar
  • 1 TBS finely chopped fresh parsley
  • Salt and pepper
  • ¾ tsp Tabasco sauce
    Directions:
  1. Combine the peas, olives, onions and garlic
  2. Mix all other ingredients and pour over the vegetable mixture
  3. Refrigerate, covered, for at least 24 hours
