Hearty meal when set before a crowd of hungry guests on a cold winter's day in Louisiana!

Ingredients

  • ½ cup finely chopped onion
  • 1 TBS butter
  • 1 can French-style green beans, rinsed and drained
  • 1 can shoe peg corn
  • 1 can cream of chicken soup
  • ½ cup sour cream
  • ½ cup sharp cheddar cheese, grated
  • 12 Ritz cheese-flavored crackers, crumbled
  • ½ cup slice almonds
  • ½ stick butter
    Directions:
  1. Sauté onion in butter for about 5 minutes, until wilted
  2. Into a large bowl, combine onion, green beans and next 4 ingredients
  3. Sauté almonds in ½ stick butter until just browned, about 4 minutes
  4. Place green bean mixture into greased casserole and sprinkle cracker crumbs over top
  5. Pour butter and almonds over crackers
  6. Bake at 350° for 30 minutes

Serves 4-6
