Missy 6 large baking potatoes, washed, cut in half, with skin left on 8 slices bacon, fried crispy, crumbled and set aside; grease reserved 1 large Vidalia onion, finely chopped 1 stick butter 1 TBS fresh chives 8 ounces...
- 6 large baking potatoes, washed, cut in half, with skin left on
- 8 slices bacon, fried crispy, crumbled and set aside; grease reserved
- 1 large Vidalia onion, finely chopped
- 1 stick butter
- 1 TBS fresh chives
- 8 ounces sour cream
- 1 ½ cup grated cheddar cheese
- Boil potatoes in salted water until tender, cool and remove skins; place in refrigerator to chill for about 1 hour; remove and grate
- Sauté onion in reserved bacon grease until almost brown, about 12 minutes
- Add butter and chives, and continue cooking for 2 minutes; remove from heat
- Into a large bowl, mix onions, sour cream, potatoes, 1 cup grated cheese
- Place into greased casserole dish, topping with bacon bits and remaining ½ cup of cheese
- Bake a 375° for 15 minutes
Serves 6-8
