  • 2 bunches mustard greens (about 2 pounds)
  • water to cover
  • ¼ pound salt pork, cut into 1” pieces
  • 1 tsp salt
  • 1 tsp Tabasco sauce
  • 1 tsp sugar
  • ½ tsp black pepper
  • ½ cup onions, finely chopped
  1. Soak greens in water for 2 minutes, then clean each by cutting off any thick stems or bad pieces; place into large, heavy pot and add enough water to cover
  2. Add remaining ingredients and bring mixture to a boil over high heat; boil for 4 minutes, then reduce to low simmer, covered for 25 minutes until greens are tender
  3. Remove greens from pot to large bowl and bring pot liquid to a hard boil until liquid is reduced by 2/3’s; return greens to pot and simmer for 3 minutes until they are well reheated; pour into serving dish and serve immediately

Serves 6-8
