Works as an appetizer, canapé, or served as a cold vegetable

  • 3 cans tiny Belgian carrots
  • 1 onion, finely chopped
  • ½ bell pepper, finely chopped
  • ½ cup sugar
  • 1/8 cup olive oil
  • 1/2 cup apple cider vinegar
  • 1 can tomato soup
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dry mustard
  1. Mix together all ingredients and refrigerate overnight, stirring occasionally

Serves 6-8

This is always well-received! Five cans of carrots will serve 14 people; double quantity of marinade in that case
