  • 1 bag baby fresh carrots or 1 large can baby Belgian carrots
  • ¼ cup finely chopped fresh parsley leaves
  • 4 ounces orange marmalade
  • 4 TBS brown sugar
  • 1 stick butter
  1. If using fresh carrots, boil until just cooked but still firm, drain water
  2. Add butter and sugar; cook, stirring gently, until butter has melted and sugar dissolved
  3. Add orange marmalade and sprinkle with parsley
  4. Salt and pepper to taste

Serves 4-6
