  • 1 whole fresh head of cauliflower
  • 2 eggs lightly beaten
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup seasoned bread crumbs or cracker crumbs
  • Vegetable oil for frying
  1. Remove green stem from cauliflower head and drop into boiling salted water for 4 minutes; drain and pull flowerets apart, salt and pepper
  2. Place eggs into mixing bowl and dip flowerets into egg mixture, then into bread crumbs mixture
  3. Place flowerets into 2” deep, 360? oil in a deep sided pot and fry until golden brown; serve immediately

Serves 4-6

This method will work for a number of vegetables—mushrooms, carrots, broccoli, egg plant, green tomato slices. Try combining several for more varied appetizer experience.
