  • ½ pound ground pork
  • ½ pound ground beef
  • 1 pound chicken livers
  • 2 TBS all purpose flour
  • 1 finely chopped large onion
  • 1 finely chopped large bell pepper
  • 1 cup finely chopped celery
  • 3 cloves garlic, minced
  • 2 cups white rice, cooked
  • 1 tsp Tony Chachere’s seasoning mix
  • 1 tsp Tabasco
  • 1 tsp Worcestershire sauce
  • 1 cup slice green onions
  • ½ cup chopped parsley
  1. In a large, heavy skillet over medium-high heat, add pork and beef and sauté until meat is nicely browned, about 12-15 minutes
  2. Add chicken livers, reduce heat to medium and sauté for 10 minutes, stirring often
  3. Add flour, cook 7 minutes, stirring constantly to keep flour from sticking
  4. Add onion, bell pepper, celery, and garlic and sauté for 5 more minutes, stirring constantly; turn heat to low, cover, and let simmer for 15 minutes
  5. Add remaining ingredients and mix thoroughly; serve hot
