Delicious & colorful; guaranteed to wonderfully set the stage for the meal to follow
Dressing/Marinade:

  • ½ cup extra virgin olive oil
  • ½ cup red wine vinegar
  • 1 tsp sugar
  • ¾ tsp salt
  • ¼ tsp cracked black pepper
  • 2 cans whole green beans (rinsed & drained)
  • 1 can pitted whole black olives (drained)
  • 1 can artichoke hearts (drained & chopped coarsely)
  • 1 medium red onion thinly sliced into half rings
  1. Combine dressing/marinade with vegetables in bowl; cover & refrigerate about 12 hours
  2. Garnish with cherry tomatoes or tomato wedges, hard-boiled egg wedges, anchovy filets and serve
