  • 2 6-ounce packages long-grain and wild rice mix
  • 4 cups chopped roasted chicken from grocer’s deli
  • 1 small onion, finely chopped and sautéed
  • 1 small jar diced pimento, drained
  • 1 16-ounce package frozen French-style green beans, thawed
  • 1 6-ounce jar slice mushrooms, drained
  • 1 8-ounce can sliced water chestnuts, drained
  • 1 can cream of celery soup
  • 1 8-ounce container sour cream
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded Swiss or Fontina cheese
  1. Cook rice according to package directions; combine in a large mixing bowl with next 10 ingredients; mix thoroughly
  2. Spoon into a shallow 3-quart baking dish and bake at 350? for 30 minutes or until bubbly around edges

Serves 6

For seafood adaptation, substitute 1 can artichokes for green beans, add 1 box chopped frozen spinach (cooked as per directions), substitute cream of mushroom soup for celery soup and substitute 1 # shrimp (sautéed) for chicken
