- 1 cup diced eggplant
- 1 cup diced zucchini
- 1 cup diced yellow squash
- 1 cup diced tomato
- ½ cup sliced black olives
- ½ cup olive oil
- 1 pound sliced smoked sausage
- 1 cup chopped onions
- 1 cup chopped celery
- ¼ cup chopped red bell pepper
- ¼ cup chopped yellow bell pepper
- ¼ cup minced garlic
- 2 cups tomato sauce
- ¼ cup chopped thyme
- ¼ cup chopped basil
- ¼ cup fresh oregano
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp Louisiana Hot Sauce
- In large heavy skilled heat olive oil over medium high heat; sauté smoked sausage until brown; remove and set aside
- Add onions, celery, bell peppers, and garlic; sauté 4 minutes until wilted
- Add sausage, eggplant and next 4 ingredients; blend well and sauté 30 minutes, stirring occasionally
- Add tomato sauce and next 6 ingredients; continue cooking 12 minutes; remove from heat
- Spoon mixture into a greased casserole and bake uncovered at 375? for 30 minutes
