  • 1 cup diced eggplant
  • 1 cup diced zucchini
  • 1 cup diced yellow squash
  • 1 cup diced tomato
  • ½ cup sliced black olives
  • ½ cup olive oil
  • 1 pound sliced smoked sausage
  • 1 cup chopped onions
  • 1 cup chopped celery
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped yellow bell pepper
  • ¼ cup minced garlic
  • 2 cups tomato sauce
  • ¼ cup chopped thyme
  • ¼ cup chopped basil
  • ¼ cup fresh oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Louisiana Hot Sauce
  1. In large heavy skilled heat olive oil over medium high heat; sauté smoked sausage until brown; remove and set aside
  2. Add onions, celery, bell peppers, and garlic; sauté 4 minutes until wilted
  3. Add sausage, eggplant and next 4 ingredients; blend well and sauté 30 minutes, stirring occasionally
  4. Add tomato sauce and next 6 ingredients; continue cooking 12 minutes; remove from heat
  5. Spoon mixture into a greased casserole and bake uncovered at 375? for 30 minutes

Serves 6-8
