Interesting use of the flavors in the BLT sandwich
- 6 slices bacon
- ½ cup finely chopped white or Vidalia onion
- ¼ green bell pepper, finely diced
- ¼ red bell pepper, finely diced
- ¼ yellow bell pepper, finely diced
- 1 can stewed tomatoes (Cajun style if available)
- 2 cans tomato soup
- 8 ounces whipping cream
- ½ tsp salt
- ½ tsp black pepper
- 1/8 tsp cayenne pepper
- 1 pod garlic crushed
- ¼ tsp caraway seeds
- ½ tsp basil
- Garnish:
- Cheddar cheese
- Crumbled bacon
- Finely chopped lettuce
- Diced tomato
- In bottom of soup pot, fry bacon until crisp; remove & set aside
- Into bacon grease sauté onion and bell peppers until well softened; about 7 minutes
- Add tomatoes and continue cooking at medium heat for 5 additional minutes
- Gradually add tomato soup and whipping cream
- Add seasonings
- Lower heat to simmer and cook for 30 minutes
- Serve into individual soup bowls or cups; garnish with ingredients listed above
