Excellent!  Delicious combination of fresh catfish with ham.

Ingredients:

  • 2 large eggs
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 ¼ tsp salt, divided
  • 2 tsp ground red pepper, divided
  • 4-6 catfish fillets (about 1 ½ pounds)
  • 2 cups vegetable oil
  • 12 large fresh shrimp, peeled and de-veined
  • 1 TBS butter
  • 2 tsp garlic, minced
  • ¼ cup vermouth
  • 2 cups whipping cream
  • ¼ cup chopped green onions, divided
  • 2 tsp lemon juice
  • 3 very thin cooked ham slices, cut into strips
  • Lemon slices for garnish

Instructions:

  1. Whisk together eggs and milk
  2. Combine flour, 1 tsp salt, ½ tsp red pepper into shallow dish
  3. Dredge fillets through flour, dip into milk mixture, and again into flour
  4. Pour oil to depth of approximately 1”-1 ½ “ in skillet; heat to 360°
  5. Fry fillets 6 minutes or until golden; drain on rack placed over shallow pan or paper towels; keep warm
  6. Melt butter in large heavy skillet over medium heat
  7. Add shrimp and garlic and sauté, stirring often until shrimp turn pink; remove shrimp, reserve drippings
  8. Stir vermouth into reserved drippings; bring mixture to boil, and cook for 1 minute
  9. Add whipping cream, 2 TBS green onions, lemon juice, ¼ tsp salt, ½ tsp red pepper; cook stirring often for about 12-15 minutes until mixture thickens
  10. Place catfish on serving plate; drizzle with sauce, top with shrimp and ham
  11. Sprinkle remaining 2 TBS green onions and garnish with lemon slice

Serves 4

Goes nicely with fresh steamed green beans and baked potato
