Delicious take on a baked oyster recipe!

Ingredients:

  • 5 cups finely chopped onions
  • 1/2 TBS minced garlic
  • 1 bay leaf, minced
  • 4 stalks celery, finely chopped
  • 1/8 tsp thyme
  • 10 TBS butter
  • 4 dozen oysters, strained, reserving liquor, and chopped
  • 1 1/2 cups bread crumbs
  • 36 oyster shells, cleaned or 36 shell ramekins
  • 18 strips bacon, pre-cooked crispy, drained and halved
  • 6 lemon wedges, for garnish

Directions:

  1. Into a large iron skillet, saute onion and next 4 ingredients in 6 TBS butter for about 15 minutes
  2. Add chopped oysters
  3. Moisten 1 cup bread crumbs with about 1 cup of oyster liquor; add to oysters; simmering for 20-30 minutes
  4. Add 4 TBS butter, and cook until butter is melted
  5. Fill shells with mixture and sprinkle remaining bread crumbs over top
  6. Top with bacon pieces
  7. Heat oysters in 375° oven for 10-15 minutes until hot
  8. Serve 6 shells per portion
  9. Garnish each platter with lemon wedge
