Oysters Suzette

This is definitely a great way to satisfy hungry guests who enjoy fresh baked oysters!

Ingredients:

  • 1/2 lb bacon, minced
  • 2 bell peppers, finely chopped
  • 1 medium white onion, finely chopped
  • 2 celery stalks, minced
  • 1/4 cup minced pimientos
  • 1/2 cup fish stock or oyster liquor
  • 1 TBS lemon juice
  • 1 dash Angostura bitters
  • 1/8 tsp thyme
  • 2 TBS butter
  • 2 TBS flour
  • 3 dozen raw oysters
  • 3 dozen wash oyster shells or oven-proof shells
  • 3 lemons, halved

Directions:

  1. Saute bacon with peppers, onion, and celery for 6-7 minutes until fat is melted; pour off fat
  2. Add pimientos and next 4 ingredients; boil for 5 minutes
  3. In separate saucepan prepare a roux by whisking the flour and butter continuously for 5 minutes
  4. Blend roux with vegetables and stir until thickened
  5. Place one oyster on each shell and top with 1 tablespoon of sauce
  6. Bake in preheated 400° oven for 15 minutes
  7. Serve 6 oysters to a plate and garnish with lemon half
