Shrimp Casserole

Our very good friend and excellent cook, Mary was gracious enough to share this delicious shrimp recipe.  A must try!

Ingredients:

  • 1 cup white rice
  • 1 cup wild rice

Note: May substitute 2 cups of Uncle Ben’s Wild Rice Mix

  • ½ stick butter
  • 2 medium white onions, finely chopped
  • 1 cup celery, finely chopped
  • 1 bell pepper, finely chopped
  • 1 cup fresh (or 1 large jar sliced) mushrooms, sliced
  • 2 10 ½ ounce cans cream of mushroom soup
  • 2 pounds fresh, medium shrimp, peeled and deveined
  • 1 cup sharp cheddar cheese, grated
  • ½ cup of blanched slivered almonds
  • 1 small jar pimentos, finely chopped
  • ½ cup white wine
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 ½ TBS fresh parsley, chopped

Directions:

  1. Prepare white and wild rice in separate containers
  2. In skilled melt butter and sauté onions, celery, and bell pepper for 10 minutes, until wilted
  3. Add mushrooms and continue cooking 5 minutes
  4. In large bowl thoroughly combine, rice, sautéed vegetables, soup, shrimp, and next 8 ingredients
  5. Bake covered in 350? preheated oven for 45 minutes

Serves 8

This dish freezes well before baking
