- 5 pounds catfish fillets
- ½ cup prepared yellow mustard
- ¼ cup Tabasco sauce
- 2 TBS Worcestershire sauce
- ¼ cup Half & Half
- ½ cup water
- 3 TBS dry white wine
- 2 cup white cornmeal
- 2 cups all-purpose flour
- 3 tsp salt
- 2 tsp black pepper
- 1 tsp cayenne pepper
- 1 tsp onion powder
- Cooking oil for deep fat frying
- Cut fish into 2-3 ounce pieces
- Combine mustard, Tabasco, Worcestershire, cream, water and wine in a large mixing bowl until well blended
- Put white cornmeal into a food processor and blend at high speed for 3 minutes making it fine; pour into a large bowl and add the flour and next 4 ingredients; whisk thoroughly
- Coat the fish pieces in the mustard mixture, then roll in the dry cornmeal mixture
- Fry fish (a few at a time) in fryer at 375° until they float to top and turn golden brown; remove from fryer and drain on stack of dry paper towels
