Simple, yet delicious!
- 1 TBS Five pepper blend
- 4 Half-pound tuna steaks
- Salt
- 1 TBS butter
- ¼ cup olive oil
- ½ cup Cognac
- ½ cup chicken or beef stock
- 2 TBS Dijon mustard
- 1 cup heavy cream
- Crush pepper and spread over cutting board
- Press tuna steaks into pepper, coating both sides; lightly season with salt
- Combine butter and olive oil in sauté pan over high heat; when pan is hot, add steaks
- Sear, turning once, 3 minutes per side for rare (longer if you prefer medium or well done)
- Remove steaks and set aside
- Pour off excess oil from pan, add cognac and deglaze pan over high heat
- Add stock, mustard and cream and reduce sauce by half
- Spoon over steaks and serve with yellow rice and grilled vegetables
