  • 1 stick butter
  • 1 medium yellow onion, chopped
  • 1 bell pepper, chopped
  • 3 stalks celery, chopped
  • 3 cups cooked rice
  • 4 green onions, chopped
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 8 oz. half & half
  • 3 cups broccoli florets, washed and drained
  • 1 cup sliced mushrooms
  • 8 oz jalapeño or Mexican style cheese
  • 1 pound of cooked Louisiana crawfish tails
  1. In a skillet, sauté onion, bell pepper, and celery until wilted (about 8 minutes)
  2. In a large separate bowl combine remaining ingredients plus sautéed vegetables
  3. Place entire mixture into greased casserole and bake at 350° for about 40 minutes until bubbly
